My husband loves Rice Pudding!
For years, being the good wife that I am, I would try to make it, but my rice pudding never was half as good as his mother's.
Finally I found a recipe that we have really loved. It is different than the usual rice pudding recipes that I have come across. For one thing it is baked in the oven (which I like because I hate to stir pudding over the stove it just takes too long). It also is more like a custard with rice in it than a pudding.

When I found this recipe (I don't remember where that was, sorry!) I wrote it on this small sticky note. It has been there ever since. As you can see the years have left it almost unreadable.
Because we are always trying to eat healthier I have tried multiple time (at my husbands insistance) to make this recipe with brown rice. My first attempts left me believing that it just couldn't be done.

What I really like about this recipe is I just combine all of the ingredients into an oven proof bowl, place it in a pyrex with a little water in it and bake.
You bake the rice pudding until a knife comes out clean. It usually take about 50 mins.
This recipe is very forgiving on the amount of time you bake it. Forgetting that it was in the oven, I went to the store with my husband and son. When we returned the house smelled great. I thought my mother-in-law was baking something fantastic. Then it hit me. Rice Pudding! I pulled it out of the oven as quickly as I could. As you see it still looks great and it tastes great too!
Yes it will be a long time before I live that one down.
