I don't know if you use much mayonnaise, we don't.
But every once in a while a good potato salad or coleslaw can really hit the spot.
Or maybe you want to dress up a sandwich or hamburger.
To have a big bottle of store bought mayonnaise hogging up room in my fridge for a year just is annoying. How healthy can year old mayonnaise be anyway not to mention the ingredients that I have no idea what they are doing to me.
That is why I thank my sister-in-law regularly (in my mind) for the mayonnaise recipe that she shared with me years ago.
It is simple and always tastes great, and never lasts a year!
Here is what you need.

Here is what you need.
One egg, 1/3 cup oil (I like to use olive oil but you can use canola or vegetable), 2 Tbs apple cider vinegar, 1 tsp. sugar, 1/2 tsp dry mustard, 1/2 tsp salt, and then another 2/3 cup oil.
Put the first six ingredients into a blender and blend for 10-15 seconds. Slowly add the remaining oil in a steady stream while the blender is running. Blend until it is smooth and thick.

This mayonnaise turns out creamy and delicious and I know what is in it! (I had to throw in a little fruit carving.)
I hope you will enjoy this recipe as much as I do. Mayonnaise
