Wow! I feel as though I just came out of the dark ages.
This past summer, for my daughter Lindsay's birthday, I decided to buy her some supplies so she could can pears (we had found pears on sale for 25 cents a pound and we couldn't pass up the chance to buy as much as the store would let us.) She usually just borrows my pans and food mill, etc. I thought if she had her own we could can at the same time instead of having to wait for each other to finish.
While looking for supplies for her I came across the Victorio Food Strainer.

I had never seen it or heard of it before, but it looked like it might work for making applesauce which is a must in my house. So hey, I bought it.
Since I was still recovering from my daughter Bethany's wedding, I let Lindsay use the new food strainer to help her make pear-sauce.
Her report was that it seemed to work well. (she wasn't jumping up and down and shouting for joy or anything)
Jumping to the present it is applesauce time! We picked the apples, cut them, cooked them and then put them through the strainer. AAAHHHHHHHHHHHHHHH!
Choirs of angels were singing in my ears. The strainer was fabulous. I can't even tell you how much time it saved me. My husband (who is always a great help) offered to turn the strainer (I almost didn't let him because it is so fun) He was so impressed that I think he heard the choir as well.
In my excitement I e-mailed my siblings and told them all about this amazing find.
This is where it all gets so MADDENING. They already knew about the Victorio Food Strainer and at least two of them had it already. And they had been using it for years

Did it not occur to them to let the other of us low lives know about it as well. I couldn't believe that they had left me in the dark spending hours longer than needed on applesauce for years.
So now I feel the need to let everyone I know, know that the Victorio Food Strainer is amazing!
I can't wait to try it to help make grape juice, tomatoe sause, (My husband is eating this up because I rarely want to do anything with tomatoes) pumpkin puree and anything else I can think of.
I just had to let anyone who will listen know how great I think the Victorio Food Strainer is for making applesauce. That way they can't say "Why didn't you tell me?"

Cook the apples until they are nice and tender. Add a little water to your pan of apples to help keep them from scorching.
Next you run the apples through the food strainer. I also just learned that it is best to let your apples cool a bit so the heat doesn't damage the food strainer. (oops)
I don't know if you can tell what a small amount of waste there is using this product. I was thrilled. The sauce turned out smooth and delicious.
Fill your bottles, put on new lids and process in a water bath for 30 min.

If you are wondering why some of the bottles of applesauce are a deeper color it is because I pressure cooked those apples. This gives the applesauce a little more flavor.
