The recipe I have decided to share with you this week is a great little pesto that my husband loves on his turkey sandwiches.
It is a sun dried tomato pesto recipe that was handed out with a fresh fruit and vegetable bundle that Laura Muir used to sell. She now has a blog you should check out called Fresh Cooking = Happy People
This pesto is packed with flavor and can be versatile in it's use. Originally Laura suggested that you use the pesto with pasta, vegetables and possibly some meat to make a complete meal for dinner. If you decide to try this use 1/2 cup pesto mixed with about a cup of liquid saved from cooking the pasta. It will make a great sauce for you pasta.
Our favorite way to use the pesto is in sandwiches. It adds a gourmet touch that really gives your mouth a treat.

And mix it until it makes a course paste.
Voila! Pesto!
