This past week my daughter sent a photo of the stuffed peppers that she had just made for dinner.
Since she sent the picture to everyone in the family, I knew I was in trouble. My husband loves stuffed peppers and I think I only tried making them once in the first year or two of our marriage.
My daughter also sent me the recipe that she used so I really had no excuse, especially since peppers are in season and reasonably priced. OK, the truth is that when I made my menu for the week I did not include stuffed peppers. While I was at the store I went against my rule of only buying what is on my list, and I grabbed four peppers at the last minute. I remembered that I did have some quinoa in the fridge that needed to be used and I had just cooked some black beans to go in some chili so why not go for it.
We just had our Family Fall Festival/Halloween Party and I needed a quick easy meal.

I of course cannot really follow any recipe exactly. I had to make it my own.
I used:
3 cups quinoa
1 can corn
1 can diced green chilies
1/2 cup pepper jack cheese
1 cup chili (left over from the Halloween Party)( you could just use black beans and add some ground beef if you want to)
chopped cilantro to taste
1 tsp cumin
1/tsp garlic powder
1 tsp chili powder
1/2 tsp onion powder
ground pepper to taste.
Bake at 350 degrees for 30 min.
Top with salsa and sour cream.

The reviews were great. Everyone loved them. We did decide that when I make them again (I will be making them again) I will add more meat and cheese. The meat that was in the chili I used just wasn't quite enough.
Another think that I really like about this recipe is that it would be easy to leave out any meat for the vegetarians in the family. Stuff one or two pepper for the non-meat eaters and then add meat to the mixture and stuff the rest of the peppers.
