This Pat-a-Pan squash has a mild flavor. It is beautiful and it grows like a zuccini. You have to watch it everyday or they can get big.
The little ones can be fun to stuff. Even though I have done that before, I find it a bit tedious.
I have been using the pat-a-pan in stir fries (and I mean all kinds of stir fries) but my son Noah is starting to revolt.
Just when I thought I would never be able to use all the squash before it got too old, my daughter Lindsay told me about a "Mexican Soup" that she had just made. She reported that her husband really liked it and even if he isn't a super picky eater his approval still means a lot. So why not try it.
Of course, it is nearly impossible for me to just follow a recipe without adjusting it some how so here is what I did. (I know you are going to say "How easy is that!"
Cut the squash, take out the seeds, diced it up and throw it into the pan.

Well. OK, it did take awhile to cut up all the squash but it was so nice to be using it I didn't mind the time it took. Also before throwing the squash into the pan I had put 3 Tbs of butter and about 3 Tbs of olive oil with two leeks and a couple of chili peppers from the garden to saute into the pan first. (at least I think they were chili peppers, I really don't know what kind of peppers are growing there, but it worked.)
Adding a little water to the pan so the squash wouldn't scorch you let it cook until tender. I like mine really cooked so I go for the mushy stage.
Next you add water. the amount of water will vary depending on the squash you use and the desired consistency of the soup. I like my soup thick. I think that gives it a rich and comforting feel. At the same time as the water, you add 2 heaping spoons of Better Than Boullion Chicken Base (Love the stuff). Substituting Vegetable Boullion also works great. (I had to say that for the vegetarian in the family. but it really does work great)
With an immersion blender it is now time to puree the squash. Once I had the squash as smooth as I like it I added a cup of cream, salt and pepper, and about 2 tsps of Cholula Sauce
