Three weeks ago my husband, being the thoughtful person that he is, went to Costco to pick up a few items for me. I have been training him for the past, I won't tell you how many years, to only buy the items that I ask for.
He really is getting better at it but he came home with a big bag of baby organic kale.
I had no idea what to do with it. My only experience with kale was at a cooking demonstration where they used it in a smoothie. I really didn't like the smoothie that much so I wasn't impressed.
They say that kale is one of the most nutritious foods there is but it scared me. Needless to say a good portion of that bag had to be tossed with all the other things that go the way of the world.
Somehow I decided that I couldn't let a little leaf get the better of me and I decided to purchase another bag of kale the next time I was at Costco (I am there quite a lot).
I honestly believed that making smoothies was the only way I would ever be able to use kale. It is nice to be able to hide it amongst strawberries and bananas.
Then my husband suggested that we try it in a salad.
Being the intellegent person that he is, he found a recipe online (he knew if he left it up to me it would never happen).
The recipe he found was at http://www.kalynskitchen.com/. Kalyn's Kitchen is a fun site that features food that is trendy but not too far out there. There were a number of recipes that I would like to try (She has no idea I am writing this).
The salad we decided to try was Raw Baby Kale Salad with Apples, Sunflower Seeds, and Lemon-Dijon Vinaigrette.
I was a little nervous to try it but it was fabulous. Everyone loved it and there weren't any comments like the one my grandson once said to me when I served a mixed green salad "Grandma made a mistake and put weeds in the salad".
Next day, packing my husbands lunch, (he almost always has to have a salad) I thought I would use the kale again but this time I decided to use one of my favorite poppy seed dressings. My husband voted for raspberries in it as well as pumpkin seeds.
The text I got around noon was. "Salad even better than yesterday! You need to try it with raspberries".
So I did.

I wasn't in love with it like my husband. Maybe it was because I used frozen raspberries instead of fresh, I don't know, but I added some goat cheese and the singing and rejoicing started.
