I am going to a get together were you need to take a fall dish and recipe to share. Since I have a lot of eggplant from the garden I have chosen to take a middle eastern appetizer called Baba Ghanoush.
I was first introduced to Baba Ghanoush when my husband made it to take to a New Years Eve party where we were asked to bring a dish we had never made before.
I fell in love with this dish and it was my personal special treat for a long time until the kids got old enough to appreciate it as well. All but one of my children think it is great. Who knew eggplant could taste so good?
Starting with the eggplant from the garden,

Starting with the eggplant from the garden,
You wash the eggplant and then prick them with a fork several times on all sides. Then place them on a pan that you don't care about to broil them on in the oven. (I use an old cookie sheet that is warped from the heat) You don't want to use a good pan because it will get ruined.
With the oven turned to Broil place the cookie sheet with the eggplant into the oven and broil for 6 to 7 mins. Then turn the eggplant on to another side and broil again for 6 to 7 mins. Repeat for the remaining two sides.
It should look chard and wrinkly when it is done roasting. (Often at this stage if I am pressed for time I will put the eggplant in the fridge to wait until I am ready to finish.)
Cut the roasted eggplant in half and scoop out the inside flesh. I was able to just peel the skin off it was roasted so well.
I put the eggplant flesh straight into a food processor. Add the remaining ingredients 1/4 cup finely chopped onion, 2 cloves garlic minced, 1/4 cup tahini paste, 1/4 cup lemon juice.
2 Tbs olive oil and 1 tsp. salt
Process until a smooth paste.
Serve warm or cold with pita wedged or my personal favorite soda crackers.
