Have you ever cut open a watermelon excited for that refreshing coolness only to find that it is mushy? Yuck!!!!!
That is what happened to me this past weekend. I had carved this peonie to be the perfect garnish for a platter of watermelon that I wanted to serve for Sunday dinner.

Only to find when I was putting the watermelon on the platter, it was inedible. You may ask how I know it was inedible? I used the old fashioned way and popped a piece into my mouth while I was arranging the fruit and realized that it was just too over ripe to be enjoyable. Since everyone was waiting to eat, I simply put the watermelon in a tupperware and chalked it up to life.
I didn't throw it away because it is possible to make mushy over ripe watermelon into a delightful treat.
Put your watermelon into a blender (I use a Blendtec) with a little bit of lime juice (I only used between 1 and 2 teaspoons) and then add a heaping tablespoon of sweetened condensed milk (when I say tablespoon I mean the kind of big spoon you put on your table, not the measuring kind).
Voila! You have a refreshing drink that you can serve proudly to anyone.
We drank it so fast that I didn't get a picture of it. Sorry!
You can just blend up the watermelon without adding anything to it and it will still be refreshing, (I do it all the time even with watermelon that isn't over ripe) but if you want to serve your mushy watermelon with confidence add a little lime juice and a little sweetened condensed milk and the angels really will sing!
