2 cans chopped Rotel tomatoes (1 can mild and 1 can original)
2 cans black-eyed peas, rinsed and drained
1 can shoe peg corn drained ( you can use regular corn or frozen corn)
grape tomatoes cut in half
1 recipe of dressing (below)
Directions:
Mix all ingredient except the grape tomatoes and refrigerate overnight.
Just before serving add the grape tomatoes.
Serve with chips (corn chips or scoop Fritos)
Dressing:
1 bunch green onions chopped
1 green pepper chopped finely
1 package Good Season Italian dressing (I use any brand but I do think that the Good Season brand is the best) Mix according to package directions using red wine vinegar and olive oil.
