Salsa
3 1/2 Quarts tomatoes blanched, peeled and diced 2 green peppers diced 2-4 jalapeno peppers diced 2 onions diced 2 cherry peppers opt. diced Place into a heavy duty pot and add: 1 can green chilies 2 Tb. vegetable oil 2 Tb red wine vinegar 1 1/2 Tb. sugar 1 1/2 Tb. salt 1 tsp. pepper 1 tsp. cumin 1 tsp. oregano 2 cloves of garlic Bring to a boil and reduce heat to simmer for 30 min. Place salsa into clean bottles with new lids and rings and process in a water bath for 30 min. |
