French Onion Soup
Begin by making a Beef Consomme
4 cups water
4 tsp. Better Than Bouillon Beef Base
1 carrot sliced
1 stalk celery sliced
1 onion sliced
2 sprigs parsley
1 bay leaf
1/8 tsp. dry thyme
Bring all ingredients to a boil. Reduce heat and simmer for 30 mins.
Strain
While the consomme is cooking:
Melt 2 Tbs butter.
Add 3 sliced onions.
Cover and simmer on low heat stirring occasionally for 30 mins.
Add the consomme to the onions.
Add 1 tsp Worcestershire sauce.
Serve with toasted bread placed on top of the soup and sprinkled with cheese.
