Cauliflower Leek Soup
Ingredients:
2 Tbs oil
1 or 2 leeks sliced
1 large head cauliflower chopped
1 to 2 cloves garlic finely chopped
6 cups vegetable or chicken broth
salt, pepper and Cholula sauce to taste
1 cup heavy cream (optional)
1/2 cup uncooked quinuo (optional)
Directions:
In a large pot heat oil and saute leeks and cauliflower with the garlic for about 10 mins.
Add broth and bring to a boil.
Reduce heat, cover and simmer for 45 mins. (if adding quinuo add it at this time)
Remove from heat and blend the soup with an immersion blender .
Add salt, pepper, Cholula sauce and heavy cream and continue to blend until smooth.
