Baba Ghanoush
2 medium or one large eggplant
1/4 cup tahini paste
1/4 cup lemon juice (fresh is better)
2 tsp. crushed garlic
1/4 cup finely minced onion
1/2 tsp salt
2 Tb olive oil
1. With a fork prick the eggplant all over several times. Place it on a baking sheet and broil it for 6 min on all four sides. The skin should be charred on all sides. Let the eggplant cool until you are able to handle it easily.
2. Cut the eggplant in half and scoop out the middle flesh. Place it in a food processor along with the remaining ingredients.
3. You can sprinkle a little more olive oil on top to serve. It may be served warm or cold. Serve it with pita wedges or (my personal favorite) Soda Crackers.
